Did you know that there’s a seed in every coconut and as the coconut ages, if it’s near fresh water and gets damp, that seed will sprout inside the coconut? Then as the sprout grows, it uses the meat of the coconut for nourishment.
While we were at the market last night, trying to figure out what we wanted to eat, The Brit saw a coconut that had a sprout shooting out of one of its eyes. He got excited and said there might be a coconut sponge inside (I couldn’t find coconut sponge, it was all cake references but that is what he calls the sprout). He had told me about coconut sponge before so this was exciting.
He found 3 coconuts that he thought might have a sponge inside of them and off we went. We didn’t pick up anything for dinner but at least we had some coconuts, lol. Once we got back, The Brit tried to find a knife to open the coconuts but the one he had wasn’t doing the trick so out came the machete. Luckily, his Tia took care of the coconut cracking duties and look what we found!
This is a young sprout. They get as big as the inside of the coconut. Two of the three coconuts we bought had them inside. Each with a very different taste. They were both small but one tasted similar to a green peanut, had a raw nutty taste to it but the other had a fermented almost boozy taste to it.
So if you ever see a coconut sprouting at the market, go ahead and buy it and you might find a fun surprise on the inside. (If we find another sprouting coconut, I’ll take a pic and add it here and post on social media so you can see what it looks like).
